Eating less sweet food does not reprogram the taste buds. The sweet receptors on the tongue are the same before and after, and they renew themselves identically every ten days. What moves is higher up, in perception: the reference point.
In a three-month trial, participants whose diet had been stripped of sugar rated the same foods as distinctly sweeter than at the start, at identical sugar content. The pleasure they took in them had not moved: what shifts is perceived intensity. That old favorites turn sickly is something many people describe, but that trial did not measure it.
In practice, allow two to three weeks: fruit becomes dessert again. It is the same mechanism as for salt, better established still, where the preferred level genuinely falls after eight to twelve weeks of eating less salty food.
This is also what is at stake with the sweeteners, just below: by keeping the taste of sweetness, they keep the reference point where it is.

The site recommends none whose use is disputed. Three examples, to say why.
Erythritol, a polyol presented as the safest of them. In 2023, a study linked a high blood level of erythritol to more heart attacks and strokes, and showed that it made blood platelets quicker to form clots. It is an association, not proof, but it is enough to abstain.
Allulose, a rare sugar with no effect on blood glucose. It is not authorized in the European Union: in 2025, the European Food Safety Authority could not establish its safety, for lack of long-term toxicity studies.
Intense sweeteners, aspartame first. In 2023, the International Agency for Research on Cancer classed it as « possibly carcinogenic », while keeping its acceptable daily intake. And all of them keep up the taste for sweetness, which is precisely what one is trying to lose.
What the site's recipes use instead: glycine. It is not a sweetener but an amino acid, with a naturally sweet taste. It makes up a third of collagen, the body makes several grams of it a day, and it is authorized in Europe. In the chocolate mousse and the homemade ice cream, it is optional: it replaces part of the sugar. The only precautions: kidney or liver disease, or treatment with clozapine.
