🔬 Mercury (Hg): average values in mg/kg of fresh flesh, based on the averages measured by the FDA (1990-2012) and European monitoring. Leerfish, with no published measurement, is estimated from coastal predators of its size. EU regulatory limit: 0.5mg/kg (general) and 1mg/kg (predatory species). Pregnant women and children should avoid the high-content species. ANSES

🐟 Wild or farmed: nobody speaks of soft fat in fish, its fat is an oil, liquid even in cold water. But like pork (see Meat), it is what it eats: farmed salmon, fed partly on vegetable oils, carries less omega-3 and more omega-6 in its fat than wild salmon.

⚠️ Threatened species: bluefin tuna is listed as vulnerable on the IUCN red list. Eating it is not advised.
