π‘ Carbs: the "carbohydrate" figure as printed on the label. In France and the EU that figure already excludes fiber, so there is no need to subtract it again.
π A higher cocoa % does not guarantee less sugar: Poulain 47% has more sugar (52g) than NestlΓ© Dessert (46.4g), but a very different profile. High cocoa (90-95%) makes sugar drop sharply, while between 40 and 55% the gap is much smaller.
π«π₯ Chocolate vs potato chips: gram for gram, Poulain 47% (508 kcal, 28g fat) is in fact slightly lower in calories and fat than a bag of organic potato chips (542 kcal, 35g fat), but with far more sugar and far less salt. Two very different profiles for a similar calorie count.
β οΈ Careful with the saturated % taken alone: potato chips show a very low share of saturated fat (~8%, frying oil that is mostly unsaturated), well below any dark chocolate on this page. That does not make them a "better" food: the figure says nothing about salt (1.1g against 0.01-0.15g for chocolate), the degree of processing, the quality of the frying oil, or the polyphenols and minerals the cocoa brings. One number never replaces the whole picture.
